One-Pot Mexican Quinoa

One-Pot Mexican Quinoa

One-pot Mexican quinoa is a dish that’s both easy and delicious!

Quinoa Through History

The use of quinoa dates back incredibly far, possibly between 3,000 and 4,000 years ago. The seed was first used for food in the Andean region of Bolivia, Peru, and Colombia, and was referred to as the “mother grain” by the Incans.

Quinoa ended up holding quite a bit of importance for Incan culture. In a show of respect for the plant, each emperor would break ground with a golden tool at the beginning of the planting season.

The news of quinoa spread rapidly with the European colonization and exploration of South America. However, many Spanish Colonists looked down on the food, considering it to be the food of the natives – and nothing more. In fact, some colonists actively worked to destroy quinoa crops altogether.

However, the quinoa plant continued to flourish, soon making its way to the United States. Since then, it’s grown quite a bit in popularity. In fact, the United Nations has declared quinoa a superfood, and even NASA has put the grain-like seed on its list of foods to bring on long manned space travel missions.

The food continues to be a healthy choice for many meals, and in some cases is used to replace rice or other grains in certain dishes.
